Place flour, water, sugar, milk powder, Saf-instant® Gold yeast, IBIS® bread improver and calcium propionate in a bowl and mix well, approximately 12 minutes.
To prepare butter cream, mix sugar, shortening, oil and salt in a bowl and mix well until smooth.
Shaping
Transfer dough to a pre-greased container.
Cover and ferment for 60 minutes.
Punch the dough and transfer onto a pre-greased work surface.
Divide the dough equally into balls of 60g each.
Roll each ball into a thin long rope of approximately 50cm. Twist half of it and use the other half to wrap around the twisted dough.
Cover and proof the dough at room temperature for 45 minutes or until double the size.
Baking
Preheat oven to 170 ˚C.
Apply egg wash.
Bake for 10 minutes at 170 ˚C or until uniformly golden brown.
Let the buns cool.
Slice each bun horizontally and spread the butter cream.
