Preparation: 20 minutes Baking: 15 minutes Total waiting/resting: 100 minutes
Place all the ingredients into the mixer except for the chocolate chips.
Mix the ingredients for 3 minutes on low speed and 6 minutes on high speed.
Add in the chocolate chips and mix for 2 minutes on low speed.
Final dough temperature should be approximately 28˚C.
Cover the dough and it rest for 5 minutes.
SHAPING
Divide the dough into 13 pieces at approximately 60g each and let it rest for 5 minutes.
Shape each dough into a smooth ball.
Cover the dough lightly and let it rest for 90 minutes at around 30˚C.
BAKING
Preheat the oven at 220 ˚C.
Bake the buns for 15 minutes at 220˚C.
Let it cool before serving.
