Water 550ml
Egg 500g
Saf-instant® Gold10g
Salt 20g
Sugar150g
Butter 100g
Milk Powder 30g
Magimix® Yellow 4g

Butter (softened) 60g
Brown sugar 100g
Cinnamon powder 10g
Cranberries 125g
GlazingQuantity
Icing sugar200g
Water50g
Cinnamon powder2g

PREPARING THE DOUGH

  1. Pour all ingredients into a bowl, except for the fat.
  2. Mix for 4 minutes on low speed. Then, mix on high speed for 3 minutes or until the dough is 80% developed.
  3. Add the fat and mix for another 3 minutes on low speed or until the fat is fully incorporated. Continue mixing on high speed for another 2 minutes.
  4. Set the dough aside and leave to rest for 30 minutes.
  5. Next, flatten the dough, cover it and let it cool down in the chiller for 30 minutes.

SHAPING AND FILLING

  1. In a bowl, add all filling ingredients except the cranberries. Mix with a spatula until combined and set aside.
  2. Roll out the dough into a rectangle measuring 30cm x 40cm.
  3. Spread the butter filling over the dough, followed by the cranberries, then roll up the dough.
  4. Cut 2cm portions of dough and place on a baking tray, with the snail side facing up. Proof for 70 minutes at 30*c.

PREPARING THE GLAZE

  1. Pour all glazing ingredients into a bowl and mix well. Set aside for later.

BAKING

  1. Bake the dough at 200*C for 20 minutes.
  2. After baking, pour some glazing over each roll and bake for another 2 minutes.
  3. Leave to cool on a wire rack.
