Cold water5.5 kg
Shortening1 kg
Sugar320 g
Salt120 g
Saf-instant® Gold yeast120 g
Milk powder100 g
IBIS® Bread improver30 g
Calcium Propionate30 g

Preparation

  1. Combine flour, Saf-instant® Gold yeast, IBIS® bread improver and calcium propionate in a bowl.
  2. Add cold water, sugar, shortening and salt and mix well until dough is fully developed, approximately 10 minutes.

Shaping

  1. Transfer dough to a pre-greased container.
  2. Cover and ferment for 45 minutes.
  3. Punch the dough and transfer onto a pre-greased work surface.
  4. Divide the dough equally into balls of 70g each.
  5. Flatten each ball into a rectangle shape, approximately 12x6cm. Roll up each dough from the long side.
  6. Cover and proof the dough at room temperature for 60 minutes or until double the size.

Baking

  1. Preheat oven to 180 ˚C.
  2. Bake for 15 minutes at 180 ˚C or until uniformly golden brown.
  3. Let the buns cool on a wire rack.
  4. Split the bread roll partially and place the hotdog in between.
