This moist, flavourful and fruity loaf will be your new favourite bread! The bright flavours of blueberry and lemon pairs beautifully together in every bite. A delicious bread that’ll be a hit with everyone.
Add water and lemon flavour and mix for 3 minutes.
Add shortening and mix on high speed until dough is fully developed.
SHAPING
Rest the dough for 5 minutes and scale to desired weight based on your tin size.
Flatten the dough and spread it with approximately 75g of cream cheese spread.
Spread 100 – 150g of blueberry jam / filling over. Leave ½ inch space on each side.
Roll the dough up into a log. Gently slice the log lengthwise and lay one piece on top of the other to form an X. Make sure the cut sides are facing up. Do the same to the other size of the X.
Twist log with the filling layers facing up.
Proof at 27˚C for approximately 90 minutes or until double in size.
BAKING
Brush with eggwash and bake at 180˚C for 40 minutes or until golden brown.
Remove from oven and cool on a wire rack before serving.
