반죽을 약 30˚C에서 30분간 휴지합니다.
굽기
오븐을 240˚C로 예열합니다.
반죽을 끓는 물에 데칩니다. 1분간 넣어 둔 뒤 조심스럽게 뒤집어 반대면도 1분간 데칩니다.
베이글에 참깨, 양귀비씨 등을 토핑하고 싶다면 이때 올리면 됩니다.
240˚C에서 20분간 또는 균일하게 노릇노릇해질 때까지 굽습니다.
식힌 후에 차려냅니다.
