Mix all the ingredients, except butter, for 5 minutes at low speed.
Add the butter a little at a time, every 1-2 minutes, until it is fully incorporated.
This may take 8-10 minutes.
Round and smoothen the dough. Ferment for 2 hours in the chiller.
